The best brownies you will ever have.

I discovered the original recipe for these decadent brownies in Jackson Hole, Wyoming. Believe it or not, I've actually reduced the fat and sugar content from the original version. Should there be any duck eggs in my kitchen, I would certainly incorporate them into this recipe. A side note about duck eggs: these are coveted in baking for their higher fat content and natural emulsification properties, thereby adding a depth of flavor that chicken eggs simply cannot match.


The original recipe called for dark rum. I usually prefer Pusser’s Rum due to its unique distillation in wooden stills. However, I switched to Garrison Brothers Bourbon, as I was a part of their barrel program and found the bourbon to be ( EXPLETIVE DELETED) awesome! This recipe remains exceptional with their off-the-shelf offering as well.


Ingredients:

  • 4 oz Unsweetened Chocolate or 3 T cocoa powder + 1T butter

  • 1 C. Butter

  • 1 C. Flour

  • 1/4 t Salt

  • 4 Eggs

  • 2 C. Sugar

  • 2T Garrison Brothers Bourbon

Method

  1. Preparation: Preheat the oven to 350°F and grease a 9x13 baking pan.

  2. Melt the chocolate and butter in a double boiler, aiming for a water temperature of approximately 120°F.

  3. Sift together the flour and salt in a separate bowl.

  4. In a mixing bowl, whip the eggs until they are light in both texture and color. Slowly add the sugar.

  5. Gently fold in the melted chocolate.

  6. Incorporate the sifted flour and salt mixture.

  7. Fold in the Garrison Brothers Bourbon.

  8. Pour the mixture into the greased pan and bake for 25-30 minutes or until it pulls away from the sides.


Chef’s Note:

If you wish to enjoy the batter as is, refrain from baking and simply indulge with a spoon.

Garrison Brothers Bourbon Buttercream

Ingredients:

  • 1 cup (2 sticks) unsalted butter, room temperature

  • 4-4.5 cups powdered sugar, sifted (adjust as needed)

  • 4-6 tablespoons Garrison Brothers Bourbon (adjust based on flavor preference)

  • Pinch of salt

Method:

  1. Preparation: Ensure the butter is at room temperature for seamless mixing.

  2. Mix the Butter: Whip the unsalted butter until creamy and lighter in color, about 2-3 minutes on medium speed with an electric mixer.

  3. Add Sugar: Incorporate the sifted powdered sugar gradually, one cup at a time, mixing on low until it's included. Shift to medium speed until smooth.

  4. Bourbon Time: Slowly add 4 tablespoons of bourbon, tasting as you go. Feel free to adjust the amount based on your preference for bourbon flavor intensity.

  5. Add Salt: Introduce a pinch of salt and mix until well incorporated.

  6. Final Whipping: Set the mixer on high speed and whip for an extra 2-3 minutes to get that fluffy, smooth texture.

  7. Taste and Adjust: Sample and make any final adjustments to the bourbon or salt levels, ensuring the texture remains consistent.
